We managed to successfuly convert our favorite granola recipe into granola bars. Crunchy without being rock hard. Next we’ll try a nut free version for school.
3 c oats
1 c almonds, chopped
3/4 c wheat germ
1/2 c coconut
1/4 c sunflower seeds
Heat oven to 350 and toast above till lightly browned about 15 min. Stir frequently for even colour.
Meanwhile in a sauce pot combine:
2 Tb honey
1/4 c golden corn syrup
1/4 c maple syrup
1/2 c brown sugar
1 and 1/2 tsp vanilla
Bring to a simmer over medium heat. Simmer untill foamy, about 3 min.
Place parchment in the bottom of a large rimmed baking tray (11×13″). Grease paper with cooking spray.
Remove oats from oven. Reduce oven to 300.
1/4 c dried cranberries
1/4 c raisins
6 dried apricots, chopped into raisin sized pieces.
By hand or with a stand mixer on Low, add hot liquid in a steady stream while mixing. Continue to mix until throughly encorporated.
While still warm press into prepared baking tray.
Bake 15 min. @ 300.
Let cool 10 min then cut into 1″x4″ bars.
Let fully cool before removing from tray & storing in an air tight container.
Yeild 2 dozen bars
