PB&J muffins

Rainy days call for kid-friendly baking projects. That means things they can make themselves ( with some help), and enjoy eating later. I tried to make these muffins a bit healthy with wholesome and whole grain ingredients , but really it’s all about the kids having fun and liking what they’ve made.

Sift together
1 c flour
1/4 c whole wheat flour
1/3 c oats
2 tsp baking powder
1/4 tsp salt
Separately, over medium heat bring to a light simmer
2/3 c milk
Remove from heat stir in
1/2 c (natural)PB
3Tb butter
wisk together
1/2 c brown sugar packed
2 lg eggs
1.5 tsp vanilla
1/2 c jam or fresh berries

Add milk a little at a time & wisk to temper egg mix
Add remaining milk until well blended and cool
Fold in flour blend until smooth.
Put 2 tsp of batter in bottom of lined muffin tin. Indent with finger
Fill with 1 tsp jam/berries and cover with additional batter
