The kids impressed themselves by making and cooking this in under 20 min.
For the topping:
1/3 c brown sugar creamed together with 2 Tb butter.
Spread into the bottom of a greased (microwave) oven safe bowl atop the sugar place
3 slices/ 1/2 c crushed pineapple and (6 glaced cherries)
For the batter:
1/4 c butter
1/3 c sugar
Separately combine dry:
1 c flour
1 1/2 tsp baking powder
1/2 tsp salt
1 tsp cinnamon
1 tsp ginger
Add dry alternately with milk in three parts to butter sugar & eggs.
Stir together until just mixed.
Cook on med-high (70%) for 10min or until centre is set.
let stand 5 min before turning out on plate.
Also works well as a mug cake
make 3 individual mug cakes.
divide topping, pineapples, cherries and batter between 3 mugs.
cook 4-5 min each let stand 2 min before turning out.
