Bottom of the jar cookies

I cleared out my pantry this week to make way for back to school snacks and replenish our pantry’s stores of granola. It was our first truly cool damp day. So to warm things up we turned on the oven and made sure we used up the dregs at the bottom of every jar. We called these sweet bite sized cookies our  “Bottom of the Jar cookies”

3/4 c b butter/ coconut oil
2 eggs
2/3 c brown sugar
2Tb maple & golden syrup
1 tsp vanilla
1 c whole oats
1 1/4c quick oats
1 c flour (wheat, almond or grnd oat)
1 tsp baking powder
1/2 tsp baking soda
To equal 1 & 1/2c, any of:
Butterscotch chips
Chocolate chips
White chocolate chips
Raisins
Dried cranberry
Sunflower seeds
Pumpkin seeds
Nuts
Preheat oven to 375
Cream butter and sugar, add eggs vanilla and syrup.
Combine flours, oats, baking soda & powder then add to wet in batches till incorporated. Then stir in sweets.
Drop off teaspoon onto nonstick cookie sheet. Bake 9 min in 375 oven.
