We….well I, discovered the joys of fresh oysters this time last year. Their availability in our neighbourhood has increased, and with the discovery of a new babysitting service (weneeddatenight.com!) we have had the chance to eat them several times over the past few months – but it took a special occasion to make me want to try shucking. Turns out its not too hard once you get the hang of it, and I am enjoying the process of honing my skill.
Next I need to figure out how to grow horseradish – because fresh oysters topped with a pinch of fresh grated horseradish and a drizzle of mignonette can’t be beat.
1/4 c wine vinegar
1 Tb minced shallots
A turn or 2 of fresh grated pepper corns
