Chili picadillo style

A go-to  make ahead recipe…we mix the leftovers with cooked rice and a bit of salsa.

Cook 1 lb ground beef/ground round. Drain & set aside.

Saute together with a little oil,
(1/4 c or 4 strips bacon diced)
1c onion, diced
4 cloves garlic, minced
1 c green pepper, diced
1 c red pepper, diced
Once soft, add
3 Tb chili powder
3 tsp cumin
1 tsp salt
1/2 tsp cinnamon
1/2 tsp oregano
1/2 tsp corriander seed
1/4 tsp nutmeg
Add meat/round back to pot.
Drain, rinse and add:
2 can whole tomato, tomatoes diced
2 can mixed beans
3 cans black beans
2 c frozen/canned/fresh corn, whole kernels
1 can tomato paste
1 c water/stock

(1/4 c dried apricot, diced)
(1/4 c pitted prune, diced)
(1/3 c pitted green olives, diced)
(1/4 c almonds, slivered)

Simmer at least 20 min.
Serve with a dollop of sour cream and a sprinkling of fresh chopped cilantro.
